
Chacarero

A Chacarero is a traditional sandwich from Chile. If you are lucky enough to live in Boston, you can stop into the local Chacarero restaurant and order one fresh. If not, you can find all the ingredients at your local grocery store and bring home the tastes of Chile! At the restaurant you have the option of either chicken or beef, plain or BBQ style. The only thing I can not offer you is the authentic Chilean bread that you would get at the restaurant. When I do find the recipe for the bread I will update the post. I’m giving you a recipe below for pulled bbq chicken. The sandwich is then topped with muenster cheese, tomato slices, fresh avocado spread and steamed green beans. If you dare, you can top it off with your favorite hot sauce!
Pulled Chicken
INGREDIENTS:
3 skinless, boneless chicken breast halves
1/2 onion finely chopped
4 cloves garlic, finely chopped
1 cup barbecue sauce
1/4 cup apple cider vinegar
Salt and pepper
Hot pepper sauce
DIRECTIONS:
Season the chicken with salt and pepper and place in a heavy pot with the onion, garlic and just enough water to cover (about 1 1/2-2 cups). Add the barbecue sauce, vinegar and a few drops hot sauce and bring to a boil. Reduce the heat and simmer until the chicken is cooked through, about 15 minutes. Spoon off any of the foam that may appear.
Remove the chicken from the sauce and shred with two forks.
Boil the sauce, until reduced by half (about 15-20 minutes). Season with salt and pepper. Add the shredded chicken and heat through.

Chacarero’s
INGREDIENTS:
1 sandwich roll
1/2 avocado, smashed
Handful of green beans, steamed
1 slice Muenster cheese
Few drops hot pepper sauce
2 tomato slices
8 oz. pulled chicken
DIRECTIONS:
Build the sandwich by placing the pulled chicken on one side of the bun. Top with cheese and tomato. On the other bun, spread on the smashed avocado, green beans and hot pepper sauce.
