Living on the east coast, most of us miss out on the ability to grill outdoors year round. The taste of spring weather yesterday had me thinking about dusting off the grill and firing it up for some Corona Chicken. Chicken breast marinated and stuffed with onions, jalapeños, jack cheese and wrapped up in bacon. We can thank Anthony Bourdain for this one. If you’ve never heard of him, he hosts a travel/food show called No Reservations on the Travel Channel. During the Mexico episode he visits a bar in Del Rio, Texas called TB’s Bar and Grill. The cameras go back into the kitchen and show the chef’s secrets of preparing the dish. I quickly jotted down all the ingredients and wrote up a recipe. I think glazing the chicken with the teriyaki sauce right at the end definitely adds the finishing touches to this one!

Ingredients:

2 Chicken Breasts
1/2 Onion, chopped fine
1-2 Jalapeños, chopped fine
Shredded Jack cheese
6-8 strips Bacon
1 cup Italian dressing
Teriyaki sauce
toothpicks or wooden skewers

Directions:

Fillet the chicken breasts, marinate for 15-30 minutes in Italian dressing.

Lay chicken breasts on flat surface, stuff with onions, jalapeños, cheese, roll them up and then wrap them completely around with the bacon strip. Put in toothpicks or wooden skewers to hold them together.

Grill slowly for about 20 minutes on low to medium heat. Baste with extra Italian dressing. Just before they are done grilling, baste once more, this time with Teriyaki Sauce.

  3. Hi Lisa, Your favorite vegetable dish would go perfectly with this. Grilled brussel sprouts, broccoli, mashed potatoes or even corn on the cob.
