I must admit I’d never thought of mixing orange marmalade and seafood, but the combination goes perfectly together. This is one of the first recipes that got me started cooking. I owe it all to my friend Shanna for this one. Although after she taught me this recipe I later found out it was handed down from her mother! Definitely prepare this dish as an appetizer at your next dinner party, your guests will thank you later!

Crab Cakes

2 eggs
2 cans crab meat
1 cup bread crumbs
2/3 cup mayo
4 tablespoons minced onion
2 tablespoons minced celery
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
2 teaspoon Old bay
4 cloves garlic, minced
few drops hot pepper sauce
salt & pepper to taste
2 tablespoons olive oil for frying

Mix all ingredients in a bowl. Form and shape the mixture into 3″ diameter patties about 3/4″ thick.

Fry in olive oil in a saute pan over medium heat until golden brown. Transfer to a serving plate and cover with marmalade sauce.

Marmalade sauce for Crab cakes

3/4 cup Orange marmalade
2 teaspoons horse radish
2 tablespoons OJ
2 tablespoons lemon juice
1/2 teaspoon ground ginger

Mix and heat all ingredients in a sauce pan over low-medium heat for about 5 minutes until warm.
