Mom’s Red Sauce and Meatballs

Nothing says home more than one of your Mom’s home cooked specialties. The first thing I do when I visit my parents is request all my favorite food dishes for the week! It’s a nice little bonus every now and then to not have to research recipes and cook the food but just focus on the food photo shoot. This dish is you basic red sauce over angel hair pasta but the secret is in the meatballs. They are cooked on the grill to give them a nice smoky grill flavoring and then added to the sauce! You can use a grill skillet to easily cook the meatballs on the open flame.

Serves 6
Meatballs

INGREDIENTS:

1 1/2 lbs. ground beef
1/4 cup Italian bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon fresh garlic, minced
1 teaspoon dried basil
1/4 cup onion, chopped fine
1 large egg

DIRECTIONS:

step1 In a bowl, mix ingredients and then shape into 1 1/2 inch meatballs.

step2 Preheat grill to 350 Fahrenheit

step3 Cook on grill or grill pan for about 8-10 minutes or until meatballs have a nice burn on the outside, turning occasionally. Remove from grill and set aside.

To pan fry: Cook meatballs over medium heat about 10 minutes, turning occassionally.


Red Sauce

INGREDIENTS:

1 tablespoon dried basil
1 tablespoon dried oregano
1/2 teaspoon salt
2 cloves garlic, crushed
2 (6 ounce cans) tomato paste, diluted with 1 1/2 cups of water
1 16 ounce can diced tomatoes
1 lb Angel Hair pasta, cooked al dente
Grated Parmesan Cheese

DIRECTIONS:

step1 Mix above ingredients in a 9 quart sauce pan to boiling. Reduce heat, cover and simmer 30 minutes, stirring occasionally. Next, add the meatballs to the sauce mixture and simmer another 30 minutes.

step2 Serve over angel hair pasta. Add grated Parmesan and sprinkle with fresh basil and parsley.

Serve with a side of garlic bread.
