
Picadillo - Cuban Feast

I have to admit, the first time I ever tried this dish was in a Miami airport at a Cuban restaurant. I never tried Cuban food before and I was drawn to this restaurant by the sheer mass of people in line to get into this place. I thought it had to be good if there were this many people waiting in line. I was blown away by all the flavors. The Picadillo was served with Arroz Amarillo (Yellow Rice) and Fried Bananas. A great drink to enjoy with this dish would have to be the Mojito! Picadillo

INGREDIENTS:
1 lb.ground beef
1 large onion
4 cloves garlic
1 green pepper
2 bay leaves
1 teaspoon oregano
1 teaspoon cumin
1 tomato, diced
1/4 cup green olives, chopped
1/2 cup raisins
Salt and pepper to taste
DIRECTIONS:
Dice the onions, garlic and green pepper on a cutting board.
In a saute pan over medium heat, add a tablespoon of oil and cook the chopped onion, garlic and green pepper. After about 5 minutes add the ground beef, mix it up and cook until browned. While the meat is browning, add the bay leaves, oregano, cumin, salt and pepper.
Once meat is cooked, you can drain any extra fat. Next add the diced tomato, olives and raisins. Mix well, cover and simmer for about 5 minutes until everything is cooked thoroughly.
Serve Picadillo with a side of Arroz Amarillo and Fried Bananas. (Recipes below)
Arroz Amarillo (Yellow Rice)
INGREDIENTS:
1 package Goya Arroz Amarillo
DIRECTIONS:
In a medium saucepan, bring 2 cups of water to boil. Add contents of rice packet and 1 tablespoon of olive oil, corn oil or butter. Stir.
Boil for 1 minute, cover tightly and reduce heat to Low. Cook for 25 minutes or until water is absorbed.
Stir rice and serve. Makes 5 (1/2) cup servings.
Fried Bananas
INGREDIENTS:
2 bananas
2 teaspoons brown sugar
1 tablespoon butter
DIRECTIONS:
Peal and cut bananas in half lengthwise.
In a non-stick skillet, over medium heat, melt the butter.
Add the brown sugar and stir well for about 1 minute, add the bananas, cook until golden brown, about 3-5 minutes on each side
